Ingredients
4 corn tortillas
1 (15 oz) can black beans, drained and rinsed
1/2 cup prepared salsa
1 tsp taco seasoning
1/2 tsp garlic powder
1 Tbs unsalted butter
4 eggs
1 cup roasted tomatillo sauce (see recipe)
1/4 cup Cotija cheese, finely grated
fresh cilantro, avocado and sour cream, for serving
lime slices, for garnish
Directions
  1. Preheat oven broiler to high. Spread the tortillas on a baking sheet. Cook for 1 to 2 minutes on each side until charred. Wrap in foil to keep warm.
  2. In a saucepan, combine the black beans, salsa, taco seasoning and garlic powder. Cook over medium heat until warmed through. Mash with a fork to a chunky consistency.
  3. In a skillet over high heat, melt the butter. Add the eggs. Cook for 2 to 3 minutes until whites are set or until eggs reach desired doneness. To serve, place a tortilla on a plate. Top with a spoonful of bean mixture, 1/4 cup of tomatillo sauce and an egg. Serve with Cotija cheese, cilantro, diced or sliced avocado, and sour cream. Garnish with lime slices.
