vegetable oil, for frying
1 cup flour
1 Tbs cornstarch
1/4 tsp salt
1 cup club soda
1 beet, thinly sliced
1 sweet potato, thinly sliced
1 zucchini, thinly sliced
1 (8 oz) pkg white mushrooms, halved
10 asparagus spears, ends trimmed
2 large carrots, cut into medium-sized sticks
12 fresh green beans
Directions
  1. Heat a deep-fryer or stockpot filled with oil to 350° F. Add flour, cornstarch and salt to a large bowl. Whisk in the club soda. Add vegetables to the batter, and toss to coat. Add each piece individually to the oil. Let excess batter drip off before placing in the oil. Fry in small batches until golden. Transfer to a paper towel-lined baking sheet. Sprinkle with salt for seasoning.
