Spicy Cornbread Waffles with Crawfish Cheddar Gravy

Ingredients
WAFFLES: 3/4 cup cornmeal
3/4 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup milk
2 Tbs honey
1 large egg
1 tsp vanilla
GRAVY: 2 Tbs butter
2 Tbs flour
2 cups milk, warmed
1 to 2 Tbs Cajun seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup white cheddar cheese, grated
1/2 cup parmesan cheese, grated
1 (12 oz) pkg frozen, cooked crawfish tails (thawed and drained)
Directions
- To make waffles, combine cornmeal, flour, baking powder, baking soda and salt in mixing bowl. Whisk to combine. In another bowl, combine milk, honey, egg and vanilla. Whisk to combine. Then, whisk into the dry ingredients until incorporated. Pour batter into hot waffle iron. Cook according to manufacturer’s directions until golden and cooked through. Keep waffles warm in a 150° F oven.
- To make gravy, melt butter over low heat in saucepan. Whisk in the flour; slowly begin adding milk. Bring to a boil; reduce to a simmer. Add Cajun seasoning, salt and pepper. Let simmer and thicken for 10 minutes. Stir in the cheeses and crawfish. When cheese has melted, remove from heat. (The sauce will continue to thicken as it cools.) Serve over warm waffles. Garnish with green onions, if desired.
