Sour Cream & Onion Cornbread Biscuits

Ingredients
4 green onions
1 1/4 cups yellow cornmeal
1 1/4 cups all purpose flour
2 tsp sugar
1 tsp salt
1/2 tsp black pepper
1/2 tsp baking soda
10 Tbs cold butter, diced
1 cup sour cream
1/4 cup butter, melted
flaky sea salt, for sprinkling
Directions
- Preheat oven to 425° F. Line a baking sheet with parchment paper. Trim both ends of the green onions, and slice thinly. Set aside.
- In a large bowl, combine the cornmeal, flour, sugar, salt, pepper and baking soda. Whisk together. Add cold butter. Use your hands to work the butter into the dry ingredients until the butter is in pea-sized pieces. Make a well in the middle. Add sour cream and green onions. Fold the batter together until ingredients come together.
- Turn the dough onto a lightly floured surface, and knead a couple of times. Pat the dough into a circle, and cut into 12 rounds using a biscuit cutter. Place biscuits on a parchment-lined baking sheet. Brush the tops with melted butter, and sprinkle with sea salt. Bake until tops are golden, about 15 to 20 minutes.
