Ingredients
2 Cornish hens
2 Tbs vegetable oil
1 Tbs fresh thyme leaves, finely chopped
1 Tbs fresh rosemary leaves, finely chopped
1 Tbs fresh sage leaves, finely chopped
1 tsp salt
1/2 tsp black pepper
1/3 cup fig preserves
1 Tbs honey
1 Tbs balsamic vinegar
1 Tbs lemon juice
8 fresh figs, halved
Directions
- Preheat oven to 350° F. Spray a roasting pan with nonstick cooking spray. Place hens in the roasting pan. Combine the oil, thyme, rosemary, sage, salt and pepper in a small bowl. Rub the mixture over the top and sides of the hens. Let the hens come to room temperature for 30 minutes.
- In a saucepan, combine the fig preserves, honey, vinegar and lemon juice. Bring to a boil, and simmer for 5 minutes. Remove from heat, and let cool.
