Pork Char Siu with Ramen Noodles

Ingredients
1 (1 1/2 lbs) pork tenderloin
1 1/2 tsp five-spice powder
1/4 cup hoisin sauce
1/4 cup soy sauce
1/4 cup honey
3 Tbs rice wine vinegar
2 Tbs peanut oil
2 cups snow peas
1 cup carrots, sliced
1 shallot, peeled and sliced
2 cloves garlic
1 tsp fresh ginger, grated
2 (3 oz) pkgs ramen noodles, for serving
Directions
- Cut pork into 1-inch chunks; place in bowl. Rub meat with five-spice powder. In measuring cup, combine hoisin sauce, soy sauce, honey and vinegar. Add 1/3 cup of sauce to pork. Stir to combine. Cover; marinate for at least 1 hour. Reserve remaining sauce for the stir-fry.
- Place large skillet or wok over high heat. When smoking hot, add oil and pork. Stir-fry until meat is seared on all sides. Remove from pan; set aside.
- Add snow peas, carrots, shallot, garlic and ginger to pan. Stir-fry for 1 to 2 minutes, or until vegetables are soft. Add pork and remaining sauce to pan. Toss to coat. Add 1/4 cup water to pan. Cook for 2 to 3 minutes, or until all ingredients are heated through and sauce has thickened and reduced slightly.
- Prepare the ramen noodles according to the package directions. Discard the seasoning packet. Serve the pork on top of the cooked noodles.
