pineapple juice, for cooking
1 cup pineapple tidbits (juice drained and reserved for cooking)
1 lime, juice and zest
1 Tbs fresh cilantro, chopped
1 Tbs vegetable oil
2 tsp rice wine vinegar

- Cook the rice according to the package directions, except substitute half of the water with pineapple juice. Let the rice cool before stirring in the remaining ingredients. Serve as a side dish with fish tacos.
