Ingredients
1 (19.5 oz) box chocolate fudge brownie mix
1/4 cup butter, melted
4 oz cream cheese, softened
1 large egg
7 oz sweetened condensed milk (1/2 can)
2 3/4 cups powdered sugar
1/2 Tbs peppermint extract
red food coloring
4 oz chocolate chips
Directions
- Preheat oven to 350° F. In medium bowl, beat brownie mix, butter, cream cheese and egg together. Scoop dough onto ungreased cookie sheet. Smooth edges of each to form a round cookie. Bake for 12 minutes or until edges are set.
- Allow cookies to cool for about 2 to 3 minutes. In separate bowl, mix together condensed milk, powdered sugar, peppermint extract and a few drops of red food coloring while cookies are cooling. Spoon the peppermint topping onto each cookie. The peppermint mixture will soften slightly. Let cookies cool for 5 minutes. Transfer to wire rack to cool completely.
- Melt chocolate in microwave for 30 seconds. Stir chocolate. Microwave for 15 more seconds or until chocolate has completely melted. (Be careful not to burn.) Spoon 1/2 tablespoon melted chocolate on top of each cookie. Let the chocolate set before serving cookies.
