4 cod fillets
1 cup panko breadcrumbs
1 cup parmesan cheese, grated
1/2 lemon, juiced
2 Tbs butter, melted
1 Tbs olive oil
1/4 tsp salt
1/2 tsp black pepper
Directions
- Preheat oven to 450° F. Line a rimmed baking sheet with foil; spray with cooking spray. Place cod on baking sheet.
- In a bowl, stir together breadcrumbs, parmesan, lemon juice, butter, olive oil, salt and pepper. Evenly spread mixture over top of cod.
- Bake for 15 minutes, depending on thickness of fish. (Thicker pieces need to cook longer.)
- Remove from oven. Use a thin spatula to lift each piece of cod off of baking sheet.
