Ingredients
2 large red onions, sliced
1 red bell pepper, cored and sliced
1 orange bell pepper, cored and sliced
1 yellow bell pepper, cored and sliced
1 (8 oz) pkg baby bella mushrooms, sliced
1 Tbs balsamic vinegar
3 tablespoons olive oil
1/2 tsp salt
1/2 tsp black pepper
Directions
  1. Place all ingredients in a bowl and toss to combine. Heat a grill and grill basket over high heat. Spray with nonstick spray and add the vegetables. Using tongs, sauté and toss the vegetables until charred, soft and cooked through; about 10 minutes. Remove to large bowl. Use as a topping on grilled sausages or hamburgers.
  2. Alternately, spread all ingredients evenly onto a large baking sheet. Roast in a 425 degree oven until charred and soft for about 20 minutes.
  3. Meanwhile, peel and halve the onion and cut into 1/4-inch slices. Add to a large bowl. Cut the tops off the bell peppers, remove seed and cut in half. Cut into 1/4 inch slices and add to the bowl along with the mushrooms. Toss with olive oil.
  4. Place the grill topper on the grill and heat to high. Pour the vegetables over the topper and on the other side of the grill place the sausages.
  5. Cook the vegetables until they are soft and grilled and the sausages until they have grill marks on all sides. Serve with buns, other favorite condiments and some of the grilled vegetables on top.
  6. Note: These grilled vegetables are also great on top of burgers. Housemade burgers stuffed with different flavorings are available at FRESH near the housemade sausages in the meat case.
