Ingredients
4 ears grilled corn, kernels removed
1/2 red onion, small diced
1 large tomato, seeded and diced
1 orange bell pepper, cored and small diced
1/2 to 1 jalapeño, seeded and finely chopped
1/4 cup cilantro, finely chopped (plus more for garnish)
2 Tbs lime juice
2 Tbs white wine vinegar
2 Tbs mayonnaise
2 Tbs sour cream
1/2 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
1/2 cup Cotija cheese, crumbled
Directions
- In a large bowl, combine corn, onion, tomato, bell pepper, jalapeño and cilantro. Toss to combine. In a measuring cup, whisk together lime juice, vinegar, mayonnaise, sour cream, paprika, salt and pepper. Pour over the vegetables; stir to coat. Sprinkle the top with cheese, and garnish with additional cilantro. Chill for 1 hour before serving.
