Ingredients
1/3 cup flour
1/4 tsp salt
2 1/2 cups 1% milk
1 (14 oz) can Brookshire’s Fat-Free Sweetened Condensed Milk
2 egg yolks
1 tsp vanilla extract
1/2 tsp banana extract
4 bananas, sliced
2 cups angel food cake crumbs
2 cups Brookshire’s Fat-Free Whipped Toppin
Directions
- Combine flour and salt in a medium saucepan. Slowly whisk in the 1% milk, sweetened condensed milk and egg yolks. Cook over medium heat for about 10 minutes or until thickened, whisking constantly. Remove from heat. Add the extracts. Pour into a bowl. Cover with plastic wrap placed directly on the pudding. Chill for 1 hour.
- To assemble the pudding, place a layer of banana slices in the bottom of a dessert glass. Top with 1/4 cup of pudding, a layer of cake crumbs and a layer of whipped topping. Repeat layers. Add additional cake crumbs and banana slices to the top. Refrigerate until ready to serve.
- Tip: Angel food cake crumbs only contain egg whites and no oil, making it a healthier alternative to the traditional wafer cookie.
