Ingredients
4 lemons, zest only
20 sprigs fresh thyme
1/2 cup kosher salt
1 Tbs coarse ground pepper
1 tsp garlic powder
Directions
  1. Preheat oven to 150° F. Spread the zest on a parchment-lined baking sheet in an even layer. Place in the oven for 20 to 30 minutes to dry. Lay the thyme sprigs on a parchment-lined baking sheet. Place in the oven for 3 hours, or until leaves are completely dry and easily separate from the stems.
  2. Once dry, pull the thyme leaves from the stems by holding the end of the stems and pulling down. Discard stems. 
  3. In a food processor, add lemon zest, thyme leaves, salt, pepper and garlic. Pulse to chop and combine. Pour into a jar; seal tightly. Store at room temperature for up to 6 months.
