Ice Cream & Cake Waffle Sandwiches

Ingredients
1 (15.25 oz) box yellow or chocolate cake mix, prepared according to package directions
1/2-gallon Goldenbrook Chocolate Vanilla Ice Cream
sprinkles or chopped nuts, for decorating
Directions
- Spoon cake batter into hot waffle iron. Cook waffles according to manufacturer’s directions. Repeat until all cake batter is used.
- Line a baking sheet with parchment paper. Working quickly, remove ice cream from the freezer. Use scissors to cut away the container. Use a serrated knife to slice the ice cream into 3/4-inch to 1-inch thick slices that are the same size as the waffles. Place the ice cream slices on baking sheet. Put them back in the freezer for 1 hour.
- When ready to assemble, place a waffle on a work surface, and top with a slice of ice cream. Top with another waffle, and press down lightly. Repeat with remaining waffles and ice cream. Freeze for 2 hours, and then slice into triangles. Add sprinkles or nuts to decorate. Freeze again until ready to serve.
