Honey Crisp Apple Butter

Ingredients
3 lbs honey crisp apples
1/2 cup honey
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 tablespoon butter, cut into cubes
1/4 tsp salt
1/4 tsp cinnamon
Directions
- Preheat oven to 300° F. Peel and core apples and cut into 8 wedges. Place in a baking dish and add the remaining ingredients. Stir to coat the apples thoroughly.
- Bake for 3 hours, stirring every hour. After 3 hours remove from oven and heat oven to 400° F. Stir the apples and mash with a fork or potato masher.
- Place back in the oven and cook for an additional 30 to 40 minutes to let the mixture caramelize and thicken. Remove from oven to cool.
- Transfer to a storage container or puree to desired consistency.
