Grilled Street Corn
Grilled street corn has become a staple for backyard BBQ as it is simple to prepare and pairs well with just about anything. Grilled Street Corn

Ingredients
4 ears of corn
1/2 cup (1 stick) unsalted butter, softened
2 Tbs fresh cilantro, finely chopped
1 lime, juice and zest
1/2 tsp salt
1/4 tsp black pepper
3 Tbs vegetable oil
1/4 cup Cotija cheese, crumbled
Directions
- Remove the outer husks of the corn, and discard outer layer.
- Pull back remaining husks, leaving them intact.
- Remove the silks.
- Bring the husks back up around the corn.
- Place corn in a baking dish.
- Cover with water. Let corn soak for 1 hour.
- In a bowl, combine the butter, cilantro, lime juice, lime zest, chipotle powder, salt and pepper.
- Set the mixture aside.
- Heat a grill to medium-high.
- Rub the corn and husks with oil.
- Place corn on the grill.
- Cook, while turning, for about 4 minutes per side.
- Turn if husks begin to burn.
- When corn is tender, pull back some of the husks.
- Spread half of butter mixture over the top.
- Remove from grill. Place in a baking dish.
- Spread remaining butter over the top.
- Place the dish in a 200° F oven for 5 minutes or until ready to serve.
- Sprinkle corn with crumbled cheese.
- Serve with lime wedges.
