Grilled Pound Cake with Mixed Berry Coulis & Ice Cream

Ingredients
CAKE: 1 Sara Lee All Butter Pound Cake (from frozen dept.)
1 stick butter, softened
2 Tbs honey
2 tsp lemon juic
vegetable oil, for grilling
vanilla ice cream, for serving
MIXED BERRY COULIS: 2 cups mixed berries (blueberries, blackberries, sliced strawberries)
1 Tbs brown sugar
1 Tbs granulated sugar
2 Tbs brandy
Directions
- Cut pound cake into 8 (1-inch thick) slices. Lay cake slices on baking sheet. In a small bowl, thoroughly stir butter, honey and lemon juice together. Spread over both sides of cake slices.
- Thoroughly clean grill grates; lightly rub with oil. Heat grill to medium. When grill is hot, place cake slices on grill. Grill just until cake develops grill marks, about 1 minute per side. Hold in a warm oven until ready to serve. Top with berry coulis and vanilla ice cream.
- Place all berry coulis ingredients in a saucepan. Cook over medium heat until fruit begins to break down and juices release (about 7 minutes), stirring frequently. Remove from heat. Let cool before serving.
