2 zucchini
2 yellow squash
1/4 cup extra virgin olive oil (plus more for drizzling)
1 Tbs fresh cilantro, chopped
1 lime, juice and zest
2 cloves garlic, finely chopped
1/4 tsp salt
1/4 tsp black pepper
lime wedges, for garnish
Directions
  1. Slice the zucchini and squash into 1/3-inch thick pieces. Place in a large zip-top bag. Add olive oil, cilantro, lime juice, lime zest, garlic, salt and pepper. Toss to combine. Refrigerate for 30 minutes to marinate. Heat a grill to high. Grill the veggies on both sides for 1 to 2 minutes per side. Remove from grill. Drizzle with additional olive oil, and garnish with lime wedges. Serve with remaining marinade, if desired.
