1/2 batch pie dough
2 eggs
1/2 cup sugar
1/2 cup corn syrup
2 Tbs butter, melted
1 tsp vanilla
1/4 tsp salt
1 cup pecan pieces
1 cup chocolate, chopped
Directions
- Preheat oven to 350° F. Roll out pie dough into a 12-inch circle on a floured work surface. To keep it from sticking, keep turning the dough and sprinkling with flour as you roll it out. Place pie dough in a 9-inch pie plate, and crimp the edges as desired. Place in the refrigerator until ready to bake.
- To make the filling, whisk together the eggs and sugar in a medium bowl. Add remaining ingredients; stir to combine. Add filling to pie shell. Bake for 45 to 50 minutes until crust is golden and filling is puffed and set. Let cool completely before serving. Serve with Goldenbrook Vanilla Ice Cream and caramel sauce, if desired.
