1. Place potatoes in a large pot, and cover with water. Bring to a boil.
2. Cook for 15 to 20 minutes or until potatoes are fork-tender and cooked through.
3. Drain the potatoes, and place back in the pot.
4. In a small saucepan, combine the garlic, adobo sauce, oil and butter.
5. Over medium heat, bring to a simmer. Cook for 2 minutes.
6. Pour the mixture over the potatoes, and turn heat to medium.
7. Carefully stir to coat the potatoes.
8. Cook for 2 minutes to crisp the skin of the potatoes.
9. Turn off the heat. Stir in the lime juice, salt and parsley.
10. Serve with lime wedges.
