Cheesy Potato Balls

Ingredients
1 (20 oz) pkg Simply Potatoes® Shredded Hash Browns
6 slices bacon, cooked and diced
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
2 eggs
1 tsp salt
1/2 tsp black pepper
vegetable oil, for frying
2 cups panko breadcrumbs
1 (4 oz) block cheddar cheese, cut into 1/2-inch cubes
Directions
- Open the package of hash browns, and drain any liquid.
- Add the potatoes, bacon, mozzarella, parmesan, eggs, salt and pepper to a food processor. Pulse until potatoes are mashed and all ingredients are combined.
- Heat oil in a large stockpot or Dutch oven over medium-high heat.
- Spread the panko onto a plate.
- Form the potato mixture into 18 tablespoon-sized balls.
- Place a cube of cheddar in the center of each ball.
- Roll the balls in the panko, and place in the hot oil.
- Fry for 8 to 10 minutes or until golden on all sides.
