Ingredients
1 1/2 lbs ground turkey
1/3 cup onions, finely minced
1 large egg
3/4 cup panko breadcrumbs
1 cup Brookshire’s BBQ Sauce, divided
1 Tbs barbecue seasoning
1 box Brookshire’s Texas Toast, thawed
tomato slices, for serving
4 slices sharp cheddar
Directions
  1. Preheat oven to 375° F. Grease a loaf pan, and set aside. In a large bowl, add the turkey, onions, egg, breadcrumbs, 3/4 cup barbecue sauce and barbecue seasoning. Use your hands to gently work the mixture into the meat. Press into loaf pan. Spread remaining 1/4 cup barbecue sauce over the top of the meatloaf. Cover the pan with foil. Bake for 30 minutes, and then remove the foil. Cook for 15 more minutes or until internal temperature of meatloaf is 165° F. Remove from oven, and let cool for 10 minutes.
  2. Cut meatloaf into 3/4-inch slices. Place a slice of meatloaf on top of a slice of toast. Top with tomato slices, a cheese slice and another toast slice. Repeat with remaining ingredients. Heat a grill pan or panini press to high heat. Add sandwiches. Use a spatula or grill press to press the sandwiches. Cook for about 4 minutes per side until cheese melts and bread is golden and toasted.

    Note: You can use beef instead of turkey for a more traditional meatloaf.
