Banana Bread Pudding with Caramel Sauce

5 eggs
4 cups 2% milk
1/2 cup granulated sugar
3 Tbs banana liqueur
2 Tbs spiced rum
1 Tbs vanilla extract
4 bananas
1 large loaf Brookshire’s Bakery French Bread
1 1/2 cups white chocolate chips
1/4 cup brown sugar
Torani® Puremade Caramel Sauce, for serving
Directions
- Whisk the eggs in a large mixing bowl. Add milk, sugar, liqueur, rum and vanilla. Slice the bananas, and add to the milk mixture. Grease a 9 x 13 baking pan, and set aside.
- Cut the bread into 3/4-inch cubes. Spread half of the cubes across the bottom of the pan. Add half of the white chocolate chips over the bread. Ladle half of the milk and banana mixture over the top. Repeat with a second layer of bread, chocolate chips and remaining milk mixture. Cover, and let the liquid soak into the bread for 30 minutes.
- Preheat oven to 350° F. Uncover the pudding. Sprinkle the top with brown sugar. Bake for 1 hour. Let cool for at least 30 minutes before serving. Serve with caramel sauce.
