Ingredients
2 cup rolled oats
1 cup creamy almond butter
2/3 cup honey
1.5 cups Medjool dates, pitted
4 tbsp chia seeds
2 tbsp ground flaxseed
1/2 cup mini dark chocolate chips
1 tsp vanilla extract
Pinch of sea salt
Directions
  1. In a food processor, pulse the rolled oats until coarsely ground. Add the dates and blend until combined.
  2. Add in almond butter, honey, chia seeds, flaxseed, vanilla extract, and a pinch of sea salt. Pulse until a dough forms.
  3. Remove mixture from food processor and add to a large bowl. Fold in mini chocolate chips. Scoop out tablespoon-sized portions and roll into balls. Place on a parchment lined tray.
  4. Refrigerate for 20-30 minutes to firm up. Store in an airtight container in the fridge for up to a week - or freeze for a quick snack anytime!
